Cutting table for ganache
You know what it's like: pouring ganache and then cutting it takes up a lot of space. The BETEC ganache cutting table offers a solution: you work in several layers. You can either cut ganache in slices of 400 by 600 millimetre for BETEC's automatic GDC or you can cut pieces to size for enrobing later.
The table is equipped with three movable trolleys on rails:
- a pouring trolley with:
- a holder for the kettle with ready-made ganache
- adjustable side and back scrapers
- side bars to determine the pouring thickness
- plastic panels to place between the different set ganache layers
- a side-cutting-trolley with:
- an easy to switch knife block with custom-made knives and adjustable spacings
- a handwheel to set the cutting depth
- a motor to drive the trolley
- a transverse-cutting-trolley with:
- an easy to switch knife block with custom-made knives and adjustable spacings
- a handwheel to set the cutting depth
- a lock table's frame of the table to avoid cutting at an angle
